While the style has deep roots and tradition in Belgium it’s only within the last decade or so that this category of beer has started to emerge in the United States. Lambic Lambic represents an irresistible challenge to many beer aficionados’ most deeply ingrained beliefs about brewing. These beers go through a very strict process to produce, including having the wort cool overnight in a koelschip, a large open container, exposed to the microculture of the brewery, allowing the natural yeasts to interact with the beer before barreling.
